Why not love the healthy and delicious broccoli stems as much as their florets?
- 2 tablespoons butter
- 2 onions, diced
- 6 cloves of garlic, diced
- 8 cups broccoli stems, sliced into thin coins
- 4 cups chicken broth
- sea salt and freshly ground black pepper
- whole milk
In a large pot sauté the onion until they begin to soften, about 6 minutes. Add the garlic and sauté, stirring, for another minute. Add the broccoli stems and continue until they begin to soften, about 5-10 minutes. Add the broth and simmer until the broccoli is tender, about 10 minutes.
Puree the soup in batches in a blender or food processor. Season to taste with sea salt, freshly ground black pepper, and whole milk.
